Healthy Banana Muffin Recipe

I love baking and so do our twin girls. As 2016 is the start of a new healthy me, I didn’t really want to bake a cake or biscuits, so I thought about what healthy things we could bake that our twins would also want to eat. 

They like cake, they like banana, so banana muffins was the obvious choice! I’ve made muffins before, but not banana ones so this was something new for us all to try. 


They’re really easy to make, but here are a few tips to make sure they turn out as good as can be:

• Use muffin tins – They’ll help to keep your muffins the right shape and stop them from flowing over the top of the case
• Don’t fill them up too much or they will overflow! I’d say fill the case around ¾ 
• Use muffin cases. Cupcake cases will be too small and your muffins will be out of shape

So here’s what you’ll need:

75g melted butter
250g self raising flour
½ ground cinnamon
1 tsp baking powder
½ tsp bicarbonate of soda
Pinch of salt
115g caster sugar
1 tsp vanilla extract
2 large, ripe bananas
2 eggs
125ml milk

How to

  • Melt the butter in a saucepan
  • Use a hand blender to mash the bananas. If you don’t have a hand blender then you can use a fork, but make sure they’re mashed well
  • Sift the flour then add to a bowl with the baking powder, bicarbonate of soda, cinnamon, caster sugar and salt. Mix together
  • Using a fork beat the eggs, vanilla extract, melted butter and milk in a separate bowl then add to the mashed banana and stir well
  • Add the dry ingredients to the egg mixture and stir until it starts to form a sticky, lumpy paste
  • Spoon the mixture into your cases and bake for 20-25 minutes
  • Allow to cool before serving and enjoy!

    Banana bread is one of my favourites so I'll definitely be trying these muffins over the Easter weeken 🙂 x

    I've never tried banana bread…but I will now! The muffins look real good x
